1/2 Cup Peanut oil 1 lb. Venison Sliced 1 Poblano Pepper Chopped Fine 1 Large Onion Cut Into Thin Wedges 1 Tbs Balsamic Vinegar 4 Garlic Cloves Chopped 1/2 Lime 3 Cups Broccoli Heads 2 Small Heads Bok Choy Chopped 3 Cups Pea Pods 2 Red Bell Peppers Cut Into Thin Wedges 2 Yellow Bell Peppers Cut Into Thin Wedges 6 Medium Portabella Mushrooms Sliced 3 Tbs Soy Sauce
Heat peanut oil in frying pan just short of smoking, add meat. Cook 1 to 1 1/2 minutes. Add Poblano pepper, onion, vinegar and garlic. Cook 1 minute, squeeze lime juice over ingredients, set aside.
Bring oil up to heat again. Add broccoli, cook for 2 minutes. Add bok choy, pea pods and bell peppers, cook for 2 more minutes. Return set aside meat mixture to pan and add mushrooms and soy sauce. Cover and let simmer for 1 minute, then serve.
