Deer Sausage In The Oven

This deer sausage recipe not only looks cool, but it’s easy and cheap to make as well. Get a small grinder, add the ingredients, and you’ll wind up with a snack that’s perfect for cutting up with chunks of your favorite cheese, or putting in the pocket of your hunting coat. Best of all, you can make it in your oven.

1 cup oatmeal
2 tbs curing salt
1 tsp mustard seed
1 tsp peppercorns
12 garlic cloves minced
1/2 medium onion minced
2 lb venison burger

Using a blender reduce oatmeal to a coarse flour. Combine oat flour, salt, mustard seeds and peppercorns in a large mixing bowl. Add to this mixture the minced garlic and onion. Add the burger and knead with your hands until thoroughly mixed.

Form mixture into sausage shapes about 1 ½-by-6 inches. Preheat oven to 300 degrees. Place sausages on an oiled cookie sheet and cure in the oven for one hour. Turn them and finish the curing process for a half-hour. Set aside to cool.

Oven-cured deer sausage stores well in the freezer, although it’s a good idea to shrink-wrap it first. This recipe can be altered to suit your taste. By adding jalapeno peppers, more onion or perhaps different spices like sage or rosemary, you can customize this oven deer sausage to make it your own.
